Sesame seed is one of the oldest oil seeds discovered, which has been used by early humans for a long time.

Today, the use of this vegetable seed has found many applications and is not limited to the use of raw sesame seeds; This has caused many sesame products to be produced and marketed according to the variety of tastes.

One of these sesame products is sesame oil, whose production process has three stages; Extraction, purification and packaging stage. In the case of cold pressed sesame oil, chemical purification is not done.

Extraction process
In ancient times, traditional and simpler methods were used to extract oil, which is still popular in some countries including India, but today oil extraction is done through industrial methods using hydraulic press, spiral press and solvent extraction.

In Asian and European countries, the extraction process mainly takes place in three stages. In the first stage, a continuous spiral press is used, and the extraction process may be done by cold or hot pressing. It goes without saying that the best method of extracting oil from sesame seeds is the cold pressing method, which produces a pure, transparent and high-quality oil after the refining process and can be used directly.

In the second stage, the flour obtained from the first stage is compressed again. At this stage, the obtained oil is thicker and must be refined for domestic use.

In the third step, the flour obtained from the second press is oiled under the same conditions. Although the obtained oil is of poor quality, it is usually used for soap making.

Refinement process
Sesame oil purification methods depend on the extraction process and the quality of the obtained oil and may be physical, chemical or both. For example, settling tanks and plate press filters are used in physical purification. At this stage, the oil is passed through filters under pressure to separate its suspended particles and obtain a smooth and transparent oil, but the oils obtained from chemical extraction with solvents require a chemical purification process to reach acceptable physical and chemical characteristics. . This method has different types and varies depending on the type of extraction and other characteristics of the oil.

Packaging process
After the extraction and purification processes, the ready-to-use sesame oil is transferred to the filling machine for the packaging process. For the packaging of sesame oil, piston cylinder fillers are used under nitrogen gas, a certain volume of oil is transferred into the packaging containers, and after nitrogen gas is injected, it is sealed without wasting time.

Impermeable metal containers with tight lids can be used to package raw edible sesame oil and refined sesame oil. If the oil is packed in metal containers for household use, these containers must be equipped with a funnel lid. This oil can also be packed in colored or transparent glass containers and labeled so that the oil is not exposed to light. In this product, the volume of packaging containers should not exceed half a liter.

In case of using polymer containers for sesame oil, the material and composition of these containers must be approved by legal authorities.
